“QUINTA DO CARAPINHAL”

 

As a consequence of the unique characteristics of our herd, pastures and production technique Vumba is able to guarantee a premium, 100% handmade sheep cheese with a genuine taste. In Portugal our cheese is one of the few, if not the only, truly organic and artisanal alternative to the industrially produced sheep cheese.

Since it is an artisanal product, “Quinta do Carapinhal” production is limited to two thousand units per year and it is only on sale at organic supermarkets and selected gourmet stores.

QUINTA DO CARAPINHAL – TRADITIONAL MATURATION

 

Our cheese’s traditional maturation period is around 45 days. The cheese is normally sold cut into halves (estimated weight: 420 grams) and packed in vacuum. According to its tradition, we also sell the cheese whole and wrapped in a white band (weight between 800 and 900 grams).

QUINTA DO CARAPINHAL – LONG MATURATION

 

For strong flavor cheese lovers we have the “Quinta do Carapinhal – Long maturation”. As a result of the long maturation period the cheese gains a drier texture and a more intense flavor.
